I fell way behind on the blog again, but I've vowed to catch up, so get ready for a bevy of make-up posts!
I came across a mini doughnut pan in a secondhand shop a few days ago, and picked it up, since I've been wanting one for awhile and have a hard time passing up a good deal. After bring it home (and washing it thoroughly), I tried out a variation on this recipe from Oh She Glows/Vegan Yum Yum (two fantastic blogs worth your time!).
They turned out pretty well! They're the right texture, but I might play around with the flavor some more. I made half a batch standard and then mixed 2 tablespoons of cocoa powder into the second half of the batter and made the other half chocolate. My batter was a bit wetter than Angela's (from Oh She Glows), so I was worried it wouldn't rise the same way, but it did. I subbed a quarter of the Earth Balance with applesauce and used 1 Tbsp ground flax and a scant 1/4 cup water as the egg substitute. I'd probably reduce the water next time. It yielded exactly 24 mini-doughnuts. The ratio of soymilk to sugar ended up being too high for me too, so I reduced the liquid a little for the icing.
My favorite combo ended up being the chocolate doughnut with coconut on top. Yum!
